How to make a simple white bread

Preparation time: 25 minutes Servings: 1 loaf of bread

Baking time: 40 minutes Total Time: around 4 hours

450 grams / 1 lb + extra  strong wheat bread flour

2 tablespoons porridge oats

2 teaspoons  salt

2 teaspoons instant active yeast

300 ml / 10.5 fl oz lukewarm water

For topping:

sesame seeds, cumin seeds, poppy seeds, (optional), etc…


First, sift the bread flour into a large bowl. It makes the flour airier and easier to mix with other ingredients. Then add and porridge oats (makes the bread softer), salt, yeast, and mix it together.

In the next step add the lukewarm water and start kneading for around 15 minutes till the dough turns into a smooth, elastic, and not sticky dough. The water should be lukewarm (no cold) – it helps the dough to grow faster. If the dough still sticky adds some flour.When you finish…Sparkle with some flour, then add to the bowl, cover it with a clean kitchen towel and leave it to rest for around  2 hours the dough. It should double its size…

 It is recommended to gently knead in the middle of the growing process. Then, knead gently one more time. Sprinkle with flour to make non-sticky surface and put it to bread mold for finally growing… If you don’t have any you can use a large sift filled with kitchen towel covered with some flour so, he dough can’t stick there.  Leave it there for another hour (or two) to grow a double size again.

Now, put the empty plate into the oven, then pre-heat the oven for 230 / 445 °F degrees for at least 30 minutes. When it is ready… take the grown dough, cut it on the top, sprinkle with a seeds of your choice, and put it into the oven on the hot plate. Then bake the bread 230 °C / 445 °F for the 10 – 12 minutes then decrease the temperature to 200 °C / 390 °F and bake for another 30 – 35 minutes. The cuts will help to bread to grow properly with no breakages…  After this time the bread should turn to gold color. Now, check the bread with tapping the base – if it is baked properly it will make a deep hollow sound. If not put it back into the oven for another  5 minutes.
