Simple Yoghurt Cake

I have to say the last couple of weeks felt like a hell because of work. But I hope everything is going to change back to normal. So it is a time to celebrate with a very simple yogurt cake. Unfortunately, I was busy so after I checked my kitchen (too lazy to go shopping) I found nothing much. Lucky me, we have a small garden with a few bushes of red currant. So I decided to bake a very simple but tasty cake and I think you should try it as well… I am using an ordinary size cup around 290ml/0.5pint… Ok. Let’s begin.

Preparation time: 10 minutes                                                            Servings: N/A

Cook time:  20 -25 minutes     Total Time: around 45 minutes

Ingredients:

1 cup Self-raising flour

½ cup Caster sugar

1 teaspoon Vanilla sugar

½ teaspoon Baking powder

2 Eggs

6 tablespoon Veg oil

10 tablespoon Plain yogurt

2 – 3 cup fruit (red currant, black currant and any other fruit you fancy – e.g. goose berry…)

Icing sugar for the topping of the cake, some strong flour, bread crumbs, butter or baking fat to rub your form

Tips!  If you are using just some sweet fruit I recommend adding some lemon juice from half a lemon to get a stronger taste.

Instructions:

  • Turn the oven on and preheat to 180 degrees Celsius (356 degrees Fahrenheit). It will take around 10 – 15 minutes.
  • Prepare the form. Rub the plate with butter or some baking fat and cover with a thin layer of strong flour or bread crumbs.
  • Get a bowl. Add flour, sugar, vanilla sugar, baking powder and mix it together. Don´t put any liquid in yet because of the baking powder.
  • Add whole eggs (no shells!!), oil, water and mix everything together.
  • Now take the bowl with the dough and fill up the cake form. Make just a thin layer.
  • Cover it with cleaned fruit.
  • Put your oil cake to preheated oven and bake it for around 20-25 minutes (depends on the type of the oven and the shape of the form) until it turns to soft brown.
  • Then take it off the oven but keep it in the form. It will need to “ripen”. Cover it with a towel and leave to cool it down.
  • Now you can do the topping with icing sugar and that´s it. Enjoy your first yogurt cake. I hope you will like it.
